White Bean Soup

Ingredients

  • 400g cans butter beans 3 cans (drained and rinsed)
  • 900ml vegetable stock
  • 2 tablespoons olive oil
  • 3 clove garlic (finely chopped)
  • 6 tomatoes (finely chopped)
  • 2 tablespoons chopped coriander
  • salt (to taste)
  • fresh black pepper (to taste)

Directions

Step 1
Put the beans and stock in a medium saucepan, bring to boil, reduce the heat, cover and simmer for 10 to 12 minutes.
Step 2
Now remove one third of beans in another pot. Remaining beans you can mashed it by blender or food processor into fine pure. Now mixed the beans the and pure into one saucepan.
Step 3
Add olive oil in the saucepan, add garlic then fry gently till golden color appears. Now add chopped tomatoes and simmer it fir 5 to 8 minutes.
Step 4
Stir the mixture meanwhile. Add salt, black pepper and coriander mix well, stop heating. Serve hot.
Step 5
Instead of cans beans, you can also used dried beans approx 500gms, just by soaking it into water for overnight. Drain it and cooked into water for 20 minutes in pressure cooker or 40 to 50 minutes in microwave or on hob. Till it becomes soft for pure.

Ingredients

  • 150g High fibre porridge oats
  • 25g dried cranberries
  • 50g dried apricots (chopped)
  • 25g sultanas
  • 300ml apple juice (unsweetened)
  • 8 tablespoons low fat natural yoghurt
  • 100g bluberries (fresh or frozen)
  • 100g rasberries (fresh or frozen)

Directions

Step 1
Mix the oats, cranberries, apricots and sultanas in a large bowl.
Step 2
Stir in apple juice. Cover and pop in the fridge for overnight.
Step 3
In the morning, share the mixture between 4 bowls. Spoon 2 tablespoon of yoghurt on each serving and add blueberries and raspberries in each bowl.

Ingredients

  • 100g canned or fresh appricots (cut in half and stones removed)
  • 300ml water
  • 4 teaspoons semolina

Directions

Step 1
Place the apricots in a saucepan, cover with the water and bring to boil. Simmer until tender.
Step 2
Blend the apricot by hand mixer or blender or liquidizer or in mixer grinder until a smooth puree.
Step 3
Put the semolina and milk in a pan. Heat slowly, stirring all the time until it thickened. Remove from the heat.
Step 4
Add 2 teaspoons of apricot puree and serve it.

Step 1
Put the leek, potato and bay leaf in a pan of water, bring to the boil and simmer until the potato is soft.
Step 2
Remove from the heat, drain the vegetables and allow them to cool.

Ingredients

  • 55g couscous
  • 125g lean lamb (diced)
  • 200ml cold water
  • 1 Small carrot (peeled and chopped)
  • 1 Small stick of celery (chopped)
  • 55g canned chickpeas (drained and rinsed)
  • spring of parsely (chopped)

Step 1
Soak the couscous in water for 5 minutes and then drain.
Step 2
Put the lamb and the cold water into a saucepan and bring to the boil.
Step 3
Simmer for 10 minutes and then add the carrot, celery, chickpeas and parsley.
Step 4
Simmer for a further 5 minutes, or until all the ingredients are very soft.
Step 5
Stir the couscous, take off the heat and allow to cool. Mash everything togheter with a fork.

  • 1 Large apple for adult

Step 1
Set the oven 200▫C, 400▫F or gas mark 6
Step 2
Wash the apples and remove the cores by a sharp knife, leaving a whole in the middle.
Step 3
Place the apple in oven proof dish. Now mix sultanas, sugar and butter together.
Step 4
Take spoon full mixture of sugar and filled in apples very gently. Press down firmly. Bake for 20-30 minutes or until the apples are tender when pierced it with a knife. Ready to serve.

Chocolate chip muffins

Ingredients

  • 175g self-raising flour
  • 50g margarine
  • 50g caster sugar
  • 2 Medium eggs
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 200g chocolate

Optional

  • sugar (a sprinkling for a crunchy top)

Directions

Step 1
Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.

Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients.

Mix well until it is lump free and then break the chocolate into small pieces and add them.
Step 2
Pour the muffin mixture into a muffin tin filling each mould up to two thirds full.

Place a block of chocolate into the middle of each muffin. Then sprinkle some sugar over the top of each.
Step 3
Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.

Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked!

Allow to cool for at least 5 minutes before eating.

Toddler Trifle

Ingredients

  • 1 banana (peeled and sliced)
  • small punnet of raspberries or stawberries (halved)
  • 300ml milk
  • 1 tablespoon cornflour
  • 30g castor sugar
  • 3 Medium eggs (seprated)
  • vanilla essence (few drops)
  • 1 Medium ready made jelly

Directions

Step 1
First add 2-3 berries then add ready made jelly in a glass bowl or in an individual bowl. Leave it to set for 10 min.
Step 2
Whisk the egg yolks, cornflour,sugar and vanilla essence together in a pan.
Step 3
Heat the milk in another pan until boiling and stir into the egg mixture.Return to the heat and stir it until thick.
Step 4
Remove from the heat and allow to cool, then pour over the set jelly. Chill and decorate before serving.

Lentil tortilla

Ingredients

  • 75g brown or green lentils (half cup)
  • 225g broccoli florets
  • 2 red onion (roundly chopped)
  • 175g cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 3 tablespoons milk or water
  • 3-4 tablespoons mixed herbs like parsely
  • 8 free range eggs
  • salt and black pepper (to taste)

Directions

Step 1
Place the lentils in a pan, cover with cold water and bring to the boil, reduce the heat and simmer for 20-25 minutes.
Step 2
Stir it and check it, lentil is cooked more than half, then add broccoli and cook for 2 minutes. Switch off the hob.
Step 3
Take another pan, add olive oil then onion rounds and cook for 5 to 8 minutes till golden brown color. Stir in between to avoid burning of onion.
Step 4
In another bowl add eggs, beat it, then add salt,black pepper, mixed herbs and lentil broccoli mixture, mix well. Now add all this mixture in onions, add cherry tomatoes. Keep this mixture in oven for 190°C / 375°F / Gas Mark 5 or in pan on hob for 10-12 minutes.
Step 5
Remove from oven, ready to serve hot, sprinkle cheese (optional).

Newborn Twins

Early Days of Twins:

Your newborn babies have very little head control, so yo need to make sure they are well supported. Sometime  newborns noises  are very loud, if your baby get upset and cry, they will not share tears this conditions happens mostly in early days to months. Your babies may look more pink because of the higher blood count in their bodies, but immature circulation may leave their hands and feet cold.  Babies cannot easily control their temperatures and can overheat, so the number of blankets required depends on the that time’s temperature. Your babies may still have Vernix ( waxy coating) in the creases of their ears, arms and groin. This waxy coating protects their skin in the womb and come away after their few baths. Babies often have skin imperfections, tiny white spots, or little rashes that gradually disappear. Flat pink or red spots at the base of babies necks or over eyelids are commonly referred to as stork bites. They may more noticeable when your babies cry, but will fade over time.

      Your tiny twins will look a bit squished for the first few days until they uncurl, this is changes in weekly to monthly.  Your baby sleep a lot initially because they have habit to sleep in womb that habit continuous outside the womb also. , giving you time to study them in detail and you will also get good sleep and rest well. During this period babies will cry more because they don,t know the difference between day and night and also due to hunger. They do not know when should take milk and at the same time they want to sleep also. In this situation you need more patience and try to feed and calm them by cuddling them. You should feed them after every 2 hours. Set time so child will not  cry more.

Head Shape:

The shape of your babies heads will depend, to an extent, on the birth, caesarean babies will have rounder heads than those born vaginally. Laying your babies on their backs to sleep may accurate uneven head shapes, but this is necessary to prevent cot death. Once your babies gain head control their head shapes will even out. Your babies have two soft spots on the top of their head called fontanelles, which are spaces between the growing skull bones. These fuse as your babies grow. You may see it pulsating from time to time, but this is normal. If you notice that your babies fontanelle have sunk, contact your GP or Doctor or midwife, as it could be sigh of serious dehydration.

 Umbilical cord:    

Your twins will each have an umbilical cord or stump where their cords where cut. You will need to keep these ares clean and dry to prevent infection. When the cord fall off, after a week or two, you will see your tummy buttons.

For spot and differences in twins, dressing them in different cloths, this will  helps them to develop their own individual identity.

Delicious soups and stocks for babies and toddlers!!!

The soups are very nutritious and easy meals for babies and toddlers. It is ideal at teatime when time is limited and energy levels are low for both mother and child. In this article you will read delicious recipes of different soups.  All recipes are suitable for home freezing. I have not included salt in any of my recipes. This is because young babies should not have salt added to any of their meals as it can be harmful to their immature kidneys. Salt is naturally present in all materials which I am using during the preparation of soups. This is the best baby food.

Many soups requires vegetable stock and chicken stock during preparation.

#Vegetable Stock: –  Quantity: 1 Liter

 Materials: 1. Medium onion peeled and chopped, 2 carrots chopped, 2 sticks of celery trimmed  and

sliced,  green top of leek chopped, 1.5 liter water.

Preparation Method: 1. Place all the ingredients in a large lidded saucepan, bring to boil,  then low the heat

and cover the saucepan by lid. Boil this for half an hour.

2. Strain the stock into a jug, discarding the vegetables , then cover and leave to cool.

3. Use the stock for the preparation of different soups.

This stock is very useful in different  soups preparation.

 

#Chicken Stock:- Quantity: 1 liter

Materials: 1 chicken tray, 1 onion peeled and chopped, 1 carrot chopped, 1 stick celery, 1 leek chopped, 2 liter water.

Preparation method: 1. Place all the ingredients in a large lidded saucepan, bring to boil, cover it by a lid. Lower the heat and keep the boiling for 1 hour.

2. Strain the stock into a jug, discarding the cooked chicken and vegetables, then cover it and leave to cool.

3. Use the stock for the preparation of different soups.

You can store all these preparations in the freeze.

This is homemade tomato sauce, which is less in salt and sugar. Multipurpose useful for all dishes and children will like it.

Home made tomato sauce

  • 400g can plum tomatoes (chopped)
  • 1 teaspoon fresh or dried herbs parsley, oregano or basil

Step 1
Heat the oil in a frying pan and fry the onion and garlic until soft.
Step 2
Add the tomatoes and chopped herbs. Stir well, on medium flame boil it for 15 minutes.
Step 3
Stir it occasionally, simmer the heat now for 15 minutes. When cooled mash it or blend it as per your preference.
Step 4
You could freeze small amounts of sauce in plastic tubes. Please consume it within seven days.

  • 1 small onion (sliced)
  • 5-6 black peppercorns

  • 115g white button mushrooms (sliced)
  • 900g white fish bones (rinsed)
  • 2l water

Note

Use for soups or sauces or freeze for future use. Remember to label carefully.

Any scum that rises to the surface should be skimmed off and discarded.
Step 3
Strain the stock through a fine sieve and taste. You may wish to reduce it further to get the flavour.
